Ham and Chicken Zucchini Bowl!

This is a super easy and super delish meal in a bowl! It is both paleo and Keto too! Eating healthy does not have to be difficult and time consuming. This meal took less than 45 mins to make. Just put on some Miles Davis and you are plating it in no time at all!

Ingredients:

2-3 large zucchini cubed

1 small yellow onion diced

2 tbsp diced garlic

1 package diced ham

1.5 cups cubed chicken (or you can use chopped up deli Turkey/chicken)

2 tbsp olive oil

Salt and pepper to taste

Options: diced bacon is always an option😋

Directions:

1. Heat oil in deep skillet over medium high heat

2. Add onions and garlic and cook until onion begin to caramelize (stirring constantly)

3. Add cubed zucchini and continue to stir as it cooks so that it doesn’t burn. It is ok to adjust heat if need be.

4. Add cubed ham and chicken and cook for about 5 more minutes. Turn on low another 10 minutes, stirring occasionally. You may add bacon at this time as well.

5. Serve it up!! I used pasta bowls but any type plate or bowl can be used.
