
Ingredients: (This recipe makes enough for one very full loaf and one smaller loaf)
3 pounds of ground Turkey meat or beef meat
1 pound bacon
2 cups shredded mozzarella cheese
3 eggs
1 chopped onion
1 TBSP minced garlic
2 TBSP Dijon or Spiced mustard
1/2 cup of gluten free Panko bread crumbs
1 TBSP of paprika blend spices
1 tsp salt
1 tsp pepper
Directions:
1. Mix together everything in a large bowl EXCEPT bacon and cheese

2. Arrange bacon in bottom of loaf pan crosswise, alternating and placing the end of the bacon on the inside edge so that it lays across the bottom of the pan and goes up the opposite side and drapes off the outside leaving enough to fold over the top when ready.
3. Next, put a thick layer of meat on top of bacon pushing down in the middle to make a pocket to hold the cheese.

4. Place mozzarella cheese in the pocket/ groove.
5. Add more meat on top, pressing and molding together.
6. Fold the bacon alternating from each side over the top!


7. Place loaf pans on top of foil lined cookie sheet
8. Bake on 350 degrees for 50 minutes
9. Take out and let sit for about 10 minutes before serving!
