
Ingredients:
2 pounds bone in chicken thighs with skin
3 tbsp olive oil
3 tbsp Dijon mustard (gluten free/paleo)
1/4 cup raw unfiltered honey
6 cloves garlic minced
2 tsp red pepper flakes and paprika blend
Salt and pepper to taste
Instructions:
1. Preheat oven to 425 degrees F
2. Place chicken thighs in 9×13 glass baking dish.
3. Salt and pepper each side
4. Whisk together olive oil, mustard, honey, garlic and paprika blend
5. Pour over each side of chicken thighs using basting brush to coat well. You will want to turn thighs with skin facing up.

6. Place in oven on middle rack and bake 35-40 minutes or until internal temperature is 165 degrees
7. When finished, cover with aluminum foil and let set for 10 minutes

I love thighs because they’re so much juicier than breast. And as I was reading the recipe I was thinking, “nice, this is paleo”. Then I see the paleo book in the picture!
