Gluten Free Primal Breakfast Bowl: Paleo and Keto Compliant!!! So Yummy!

We hear of burrito bowls and rice bowls all the time! However, it’s not too often you hear the word “Breakfast Bowl”. I love this recipe! One- because it is so delicious! Two- because it is really hearty and healthy! And Three- it’s super easy and quick and your entire meal is in one bowl.

Ingredients:

1 16oz bag of frozen cauliflower rice (defrosted)

1 pound ground sausage (you can use any type of ground sausage, I used ground Italian Turkey sausage.

1 medium diced onion (you could also use dried diced onion)

2 TBSP diced garlic (I love garlic- you can use more or less)

6-7 eggs ( if you need to be AIP compliment leave out the eggs)

2 TBSP olive oil

Salt and Pepper to taste (omit pepper to be AIP compliant)

Sprinkle of Paprika blend (omit to be AIP compliant)

Instructions:

1. Heat olive oil in large deep skillet over med- med high heat.

2. Sauté onions until clear

3. Brown sausage and also add chopped garlic at this time

4. Add cauliflower rice and continue to cook for about 5 minutes stirring constantly.

5. Add salt and pepper to your liking

Continue to cook sausage and cauliflower rice stirring, flipping and scraping the bottom of the pan constantly for about 5 minutes.

6. Break 6-7 eggs right over top of mixture then begin to fold in. Cook for about 3 more minutes, stirring constantly. Then turn of heat and let sit for about 2 minutes.

Don’t forget to scrape the bottom of Pan as you stir and fold in eggs!

7. Sprinkle with a paprika mixture and serve!

Enjoy!!! So good for the heart and soul!!!

Variations: You may add all kinds of vegetables like sliced mushrooms and peppers. You can also use diced butternut squash instead of cauliflower rice!! I have used these variations and they are equally delish!!!
