
Ingredients:
2 tbsp olive oil
2 cubed fully cooked chicken breasts
2 cups of cubed ham
1 16 ounce bag of broccoli flowerets
1 chopped medium onion
1 heaping tbsp minced garlic
1 cup shredded cheddar cheese
1 cup shredded Swiss cheese
1/4cup grated Parmesan cheese
1 box of gluten free/ grain free orzo pasta (I used Jovial grain free orzo pasta)
1/4 cup gluten free Panko bread crumbs (omit if you want to stay grain free)
For creamy mustard sauce:
1 5.4 ounce can full fat coconut cream
1/4 cup grated Parmesan cheese
1 tbsp Dijon mustard
1/4 tsp salt
1/2 tsp pepper
Directions:
1. Heat oil over med high heat in large deep skillet
2. Add onions and garlic and cooked until slightly brown stirring often
3. Add broccoli and continue to cook until broccoli is tender. Cover with lid.
4. Meanwhile mix ingredients for mustard sauce in medium size bowl and set aside.
5. Also, boil orzo pasta at this time according to directions. (Note: you can actually use any type gluten free pasta)
6.Add cubed chicken and ham to onions and broccoli mixing well. Let cook for 2-3 minutes then add mustard sauce. Cover and turn off.
7. Preheat oven to 375.
8. Pour chicken, ham and broccoli mixture into a large casserole dish adding pasta and the three cheeses. Mix very well.
9. Top with gluten free bread crumbs and a little extra cheddar cheese if desired

10. Bake at 375 for 25 minutes.
Serve alone or with a side salad!!!
