Roasted Butternut Squash!!!šŸ

What an easy side dish!!! Roasted Butternut Squash is a super yummy dish to add to any meal! It is a colorful veggie that makes it especially perfect for the fall, but really you can have this healthy choice anytime of the year!!

Ingredients:

1 medium butternut squash

2 tbsp dried onion flakes

2-3 tbsp olive oil

2 tsp garlic powder

Salt and pepper to taste

Directions:

1. Wash and scrub squash with water or veggie wash

2. Peel and cut up squash into 1 inch or bigger cubes and half rings- this can be a bit challenging but well worth the effort. Look up a quick video on how to peel and cut up a butternut squash. I use a sharp knife and a vegetable peeler throughout the process

3. Place cubes and 1/2 rings in a large bowl and toss with olive oil, cracked pepper and coarse salt.

4. Spread out in baking sheet and sprinkle with dried onion

5. Bake on middle rack of oven on 400 degrees for 45 minutes!!
