Grain free, gluten free, and yes even dairy free chocolate chip cookies!!! Did I mention I Love Chocolate Chip Cookies?!

Ok! In an effort to tighten up my diet, I had to find a new recipe for chocolate chip cookies!! I have been recently diagnosed with the autoimmune disease Graves. It’s crazy! One day you are fine and the next you are struggling to finish your 3 mile run. In all the research that seems to run together and make things even more confusing one thing is for certain….a healthful diet is very important. I am still researching and reading book after book about my disease. From Paleo to AIP, I learn something new each and every day. I have joined support groups which have really helped. Did I also mention that I am extremely ADHD? That means I usually have to read something several times before it goes into long term memory. Anyway, I first listed this recipe as AIP which I immediately got crucified for because it contains sesame, flax and baking powder. So this makes it not AIP!! I looked in my book and sure enough this recipe IS NOT AIP!!! Ugh!! So back to the drawing board to find the best AIP chocolate chip cookie!! In the meantime, This recipe knocks it out of the park for a grand slam!! IT IS DELISH!!! IT MAY NOT BE AIP BUT IT IS STILL A VERY HEALTHY ALTERNATIVE FOR THOSE OF US TAKING BABY STEPS IN AN EFFORT TO BECOME HEALTHIER, ENJOY LIFE AND DESSERT!!!😊💕😋

INGREDIENTS:

3 tbsp water

1 tbsp ground flax seeds

1/2 cup tahini

1/2 cup tiger nut flour

1/2 cup coconut sugar or maple sugar

1 tsp baking powder

1/2 cup carob chips or chocolate chips

Pinch of salt

DIRECTIONS: OVEN AT 350

1. Mix water and flax and refrigerate for 10 minutes

2. Then mix tahini, sugar and baking powder with flax

3. Stir in carob chips or choc chips and sea salt.

4. Drop heaping teaspoonfuls onto well greased or parchment lined baking sheet.

5. Bake at 350 for 10 minutes. Makes 12 cookies!!!

DELISH!!! And so good for the heart and soul!!!

  1. This is NOT AIP compliant. Please change the heading so as not to confuse new people to AIP. The seeds are non compliant as is the baking powder (because of the corn starch in it). Please research compliant AIP foods in the future before labelling as such.

    1. Yes I am aware now. It was a simple mistake. Give me a break! I was just diagnosed and trying to deal with crap!! Fine one day and not I’m not! Was excited about the recipe! Try to be a bit friendlier!

Try to be a bit friendlier! I am very new to AIP and I thought I had it. It is fixed. When people make mistakes maybe try a different approach, “hey I noticed your recipe on your blog! Are you sure it is AIP because I don’t think we are allowed sesame, flax or baking powder” I’ve read so much my eyes are seeing double.

  2. When recipes say they’re “AIP compliant” they usually mean that they are compliant with the elimination phase. This recipe has multiple reintroductions – flax, tahini and baking powder (contains cornstarch).

    1. Thank you for clarifying. I have changed the wording on the blog. I looked in my AIP book and sure enough no sesame, flax or baking powder. Still leaning!
