
INGREDIENTS:
1 medium head of cabbage chopped into 1 inch squares
1 large yellow onion
2 TPSP diced garlic
1 TBSP olive oil
6 slices of bacon
1/2 cup chicken broth
Salt and pepper to taste
DIRECTIONS:
1. Heat oil on med high in deep skillet or Dutch oven.
2. Add bacon turning after 2 minutes and continue to cook until desired crispness.
4. Add onions and cook until they start to caramelize then add chopped cabbage

5. Meanwhile cut up bacon into desired sizes and pieces
7. Add chicken broth and salt and pepper to taste.
8. Cover and simmer about 20-30 minutes – stirring occasionally to keep from sticking to bottom.
VARIATIONS: you could use diced ham, ham hock or sausage instead of bacon.
Omit pepper for AIP compliance
